Ingredients

1 head cauliflower, chopped into florets
2 TBSP grass fed butter or ghee
1 small onion, diced
2 celery ribs, diced
2 carrots, diced
2 cloves garlic, minced
1 pound ground beef
1⁄4 to 1⁄2 cup homemade beef broth or no or low sodium bone broth
1 TBSP tomato paste
2 TBSP chopped parsley
sea salt & pepper to taste


Directions:

  1. Preheat oven to 400 degrees
  2. Grease a 2-3-quart casserole dish and set aside.
  3. In a large pot, steam cauliflower until tender
  4. Heat 2 TBSP of ghee in large skillet or saucepan over medium high heat.
  5. Add the onion, celery, carrots and garlic and cook until beginning to soften, around 5 mins.
  6. Add the ground meat to the pan and cook until browned.
  7. Add beef broth as necessary to keep the mixture wet.
  8. Add the tomato paste, parsley and season with salt & pepper.
  9. Let simmer while you prepare cauliflower topping. To make the topping , drain the cooked cauliflower.
  10. Mash or puree with a stick blender until smooth.
  11. Add 2 TBSP of ghee and season with salt & pepper.
  12. To assemble, spread the meat mixture on the bottom of the dish.
  13. Top with the cauliflower mixture and smooth with a spoon.
  14. Bake for 30 minutes or until the top is brown and bubbly.
  15. Serve warm & enjoy!
