Ingredients
1 TBSP avocado oil
1 large or 2 small zucchinis, “spiralized” (If you do not have a julienne peeler or spiralizer, you can just slice thinly. You can also substitute with spaghetti squash.
1⁄2 pound ground beef
1⁄2 medium yellow onion, finely diced
1 medium carrot, peeled & grated
1 clove garlic, minced
1 jar crushed tomatoes & a little water (can use organic spaghetti sauce instead)
1⁄4 tsp crushed red pepper flakes (will add heat so it can be left out)
1⁄2 tsp dried oregano
Fresh basil leaves cut into thin ribbons or left whole
Salt & pepper to taste
Directions:
- Slice or spiralize the zucchini and place in a strainer over a bowl, salt the
- zucchini and leave it sit for a few hours (this will remove the bulk of the water from the vegetable)
- After zucchini has been “drained” add avocado oil to medium hot pan and toss with oil, salt & pepper.
- In a separate pan cook the ground beef with onion, carrots, garlic, oregano & red pepper flakes.
- Add tomatoes or organic spaghetti sauce.
- Simmer for 10 – 20 minutes or until desired taste
