Ingredients

1 TBSP avocado oil
1 large or 2 small zucchinis, “spiralized” (If you do not have a julienne peeler or spiralizer, you can just slice thinly. You can also substitute with spaghetti squash.
1⁄2 pound ground beef
1⁄2 medium yellow onion, finely diced
1 medium carrot, peeled & grated
1 clove garlic, minced
1 jar crushed tomatoes & a little water (can use organic spaghetti sauce instead)
1⁄4 tsp crushed red pepper flakes (will add heat so it can be left out)
1⁄2 tsp dried oregano
Fresh basil leaves cut into thin ribbons or left whole
Salt & pepper to taste


Directions:

  1. Slice or spiralize the zucchini and place in a strainer over a bowl, salt the
  2. zucchini and leave it sit for a few hours (this will remove the bulk of the water from the vegetable)
  3. After zucchini has been “drained” add avocado oil to medium hot pan and toss with oil, salt & pepper.
  4. In a separate pan cook the ground beef with onion, carrots, garlic, oregano & red pepper flakes.
  5. Add tomatoes or organic spaghetti sauce.
  6. Simmer for 10 – 20 minutes or until desired taste
